Often times I am at a loss of what to do with the extra overly ripe bananas that we have on hand after our freezer is full of frozen bananas for smoothies, we are tapped and tired of traditional banana bread, and we already made cookies and other typical banana-y baked goods. To combat this, I recently made banana cinnamon rolls and they did not disappoint.
First of all, who can resist the warm, comforting aroma of freshly baked cinnamon rolls? Now, imagine that same delightful scent filling your kitchen, but with a vegan twist! Today, we're diving into the world of plant-based baking to create heavenly Vegan Banana Cinnamon Rolls.

Banana Cinnamon Roll Ingredients:
2 1/2 - 3 ripe bananas, mashed (about 1 cup)
4 1/2 cups all-purpose flour
1 packet instant yeast (2 1/2 tsp)
1 cup plant-based milk (such as almond or oat milk)
1/2 cup vegan butter, melted
1/2 cup raw sugar
1 ripe banana, sliced for the filing
1/2 cup raw walnuts, chopped
1 tablespoon ground cinnamon
1/4 teaspoon salt
For the Topping:
1/2 cup powdered sugar
1-2 tablespoons plant-based milk (for icing)
Or, maple syrup for the "frosting", which is what we did
Banana Cinnamon Roll Instructions:
1. Prepare the Dough:
Add the yeast overtop a warmed dish of half of the vegan milk. Let sit for at least 5 minutes to activate the yeast. You should see some frothing on top.
Mash the ripe bananas in a mixing bowl until smooth.
In a separate bowl, combine the flour, instant yeast, and salt.
Add the mashed banana, rest of the plant-based milk, and melted vegan butter to the dry ingredients. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
2. Let the Dough Rise:
Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
3. Roll Out the Dough:
After the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
4. Prepare the Filling:
In a small bowl, mix together the sugar and ground cinnamon.
Spread the melted vegan butter over the rolled-out dough, then sprinkle the cinnamon-sugar mixture evenly over the butter.
Top with the sliced bananas and chopped walnuts.
5. Roll Up the Dough:
Starting from one long side, tightly roll up the dough into a log.
6. Slice the Rolls:
Using a sharp knife or dental floss, cut the rolled dough into 12 equal-sized pieces.
7. Bake the Rolls:
Place the rolls in a greased baking dish or dish with parchment paper, leaving a little space between each roll.
Cover the dish with a kitchen towel and let the rolls rise for another 30 minutes.
Preheat your oven to 350°F (175°C), then bake the rolls for 25-30 minutes, or until golden brown.
8. Make the Icing:
In a small bowl, whisk together the powdered sugar and plant-based milk until smooth.
Drizzle the icing over the warm cinnamon rolls.
Or for a little different twist, drizzle with warmed maple syrup and more bananas.
9. Serve and Enjoy!
Let the rolls cool for a few minutes before serving. Enjoy these vegan banana cinnamon rolls warm, with a hot cup of coffee or your favorite plant-based milk.
